Nice confidence, a guy I'd like to polish up a knife for. Hate to send good knives away to people I don't know can actually handle the edge.
By the way, it might just be because he was doing it outside and needed a slender cutting surface but a cutting board made of a suitable wood will really save the edge and allow for even faster work since the sound carries the full cut when it's wood compared to plastic.
I reckon this guy already has the proper training and edge work in his muscles though which points squarely at him using wood all the time, oh well I thought I'd throw it out there since you have so much yet awesome wood. :)
Good luck on your meteorite project too Randy, I'm watching it keenly although a bit in the back due to lack of funds right now lol.
